Maine Lobster, Thai Style.
Have you ever tried to make high quality spring rolls at home, and they fell apart while trying to eat them?

If you prefer, chicken or ground pork can be added instead of Lobster, or simply add vegetables only for deliciously fresh vegetarian spring rolls!
Lobster Spring Rolls
Fresh Maine Lobster.
Ingredients and
Preparation:
1 pack of Rice Spring Roll Wrappers. (They are widely available in all large supermarket chains. You will likely have to look in the Asian food section, or Japanese section.) 1 head of Romaine Lettuce, 1-2 green peppers, fresh Basil leaves, 4-5 white mushrooms, 1 cucumber, 2 eggs, and of course 1 Lobster!
1 pack of Rice Spring Roll Wrappers. (They are widely available in all large supermarket chains. You will likely have to look in the Asian food section, or Japanese section.) 1 head of Romaine Lettuce, 1-2 green peppers, fresh Basil leaves, 4-5 white mushrooms, 1 cucumber, 2 eggs, and of course 1 Lobster!
Make sure to slice the vegetables as we have done in the following photo. The pepper must be cut vertically, and sliced very thinly. The cucumber must be peeled, and then sliced into thin spears. Dice the mushrooms, so they are easy to spread and pour with your fingers. Tear the Basil leaves gently.
Steam the Lobster for 10-12 minutes. You can hard boil the 2 eggs in the water you steam the Lobster in.
Tear the Lobster meat into small pieces with your fingers. Add it into a mixing bowl with the 2 eggs and mix vigorously with a fork.
Wrapping the Spring Rolls:
Pour some water into a very large salad bowl. Open the Spring Roll Wrappers, and pull one out.

Slowly and carefully, dunk the first wrapper into the water. Allow it to submerge for 1 minute.

Only one Spring Roll can be made at a time.
On a full size dinner plate, carefully place the spring roll wrapper that you
just soaked. Put one leaf of lettuce over half of the wrapper, as we have done
in the following photo. Then lay a few slices of cucumber, and green pepper on
top on the lettuce. With a spoon, spread some of the Lobster Egg mix on top of
the vegetables.
Slowly add some diced mushrooms over
the Lobster Egg mix. Then add a little bit of Basil, thinly spread.
Begin to wrap “The Wrap.” Slowly pick up the end of the wrap on the same side as the vegetable you placed upon it. Slowly begin to roll it over.
With much care not to tear the wrap, continue to roll it, over the vegetables.
Once the rice wrap has been rolled far enough over, (onto itself), pick up each of the loose ends gently, and begin to fold them inside, back onto the vegetables.
Slowly turn the Spring Roll onto the unwrapped section, and tuck the loose ends inside, as you continue to roll. Try your best to roll it tightly, but care is needed not to break the rice wrapping paper. You will get good at this step with more practice.
As you make the final roll, and are just about to finish the first wrap, it will look like this. Try to make it as tight as you can. The roll is gaining some strength as it is wrapped slowly. Notice how the end is tucked inside, to keep the Lobster from spilling out.

Serving:
Carefully place the spring roll onto a large dry
serving platter. Continue to roll the rest of your Handmade Lobster Spring
