Here is what the Chu Chi will look like when it is served. |
Chu Chi is one of the most well loved curries in northern Thailand. It is also one of my very favorites. This meal is warm, but sweetened with the addition of coconut milk, and it will surely be a hit at your dinner table.
Make this dinner for a quiet date at home for two, or serve it for company.
The complements will come quickly, and they will be sincere.
Chu Chi will be a hit with everyone!
Ingredients:
1 large Red Pepper, 1 large Sweet Onion, 1 HOT Green Chili, and 4 Scallions |
1.5 Pounds of Boneless Pork Shoulder will make enough to serve 3-4 people |
Coconut Milk |
Coconut Powder will do just fine, but will make a less creamy Chu Chi. |
Red Thai Chili Paste |
Jasmine Rice tastes very good with Thai Curry |
Fresh Basil |
Remember to cut the pork into small bite sized pieces |
Preparation:
Here are all of the ingredients you will need to make Chu Chi correctly. Cut the onions into thin slices, and make the peppers fine and even, to create the perfect look. Always slice your scallions into tiny rings. Make sure you have prepped your ingredients well, it will make the curry more delicious!
Cooking:
In a large pan, put in a little but of cooking oil and add the Pork on medium heat with two large tbl. spoons of Red Thai Chili Paste. |
Add 3-4 tbl. spoons of Fish Sauce |
Once the pork in cooked on the outside, add in the Red Pepper and Onion |
Stir continuously for 3-4 minutes, until ingredients are well mixed |
As the pork nears being fully cooked, add the Hot Green Pepper and the scallions |
It is time to pour in 1\3 - 1\2 can of Coconut Milk depending on how sweet you like it |
When you see that the peppers and onions appear to be almost cooked, put in the freshly sliced Basil, and stir for 2 more minutes |
The Chu Chi is done once it looks like this. Please let it sit for 2 minutes to cool down before serving. |
Serving:
Serve an appropriate amount of rice onto each plate. |
With a large serving spoon, add the Chu Chi over the rice. Gently pour some Coconut Milk over each plate, and garnish with some fresh Basil |

These recipes are great...really nicely explained and photographed.
ReplyDeleteChuchi is from southern Thailand. Northern Thai dishes don't use coconut milk or kaffir lime.
